Homemade Vinaigrettes

Yield: 1 Cup Total Time: approx. 15 minutes


Vinaigrettes are made with oils, vinegars or citric acids, and flavor boosters. Making your own creation is as easy as picking one or more items from each of these 3 categories and blending them together!

Choose your oil(s):

  • Extra-virgin Olive Oil
  • Canola Oil
  • Peanut Oil
  • Sesame Oil
  • Grapeseed Oil

Tip: EVOO is the most popular oil for salad dressings, but grapeseed oil, with its subtle flavor, can also be used.  

Choose your vinegar and/or citrus:

  • Balsamic Vinegar
  • Red or White Wine Vinegar
  • Sherry Vinegar
  • Rice Wine Vinegar
  • Fresh Lemon Juice


Choose your flavor booster(s):

  • Dijon Mustard
  • Pesto
  • Minced Shallots
  • Honey
  • Garlic
  • Hot Sauce
  • Fresh Herbs (Parsley, Basil, Tarragon, etc)
  • Grated Ginger
  • Parmesan Cheese or Blue Cheese
  • Sun-dried Tomatoes
  • Brown Sugar

Put your desired acid/vinegar and flavor booster ingredients in a bowl and slowly whisk in the oil. Add a bit of water to thin your vinaigrette if it is too thick.


Alternatively, put all ingredients, including the oil, in a mason jar or container with a tight-fitting lid. Close lid and shake vigorously for 20 seconds

Cilantro-Lime Vinaigrette

Ingredients:

- ¼ cup water

- 3 tbls lime juice

- 1/2 cup olive oil

- 1 tbls cilantro


Fresh Basil Vinaigrette

Ingredients:

- 1 tsp Dijon mustard

- 1 shallot, chopped

- ½ tsp salt

- 1 tsp honey

- 1 tsp lemon juice

- ½ cup basil leaves, fresh, chopped

- 2 tsp rice wine vinegar

- ½ cup olive oil

Tip: To make this creamy, add ¼ cup of Mayo. This version makes a great dressing for pasta salad.


Greek Vinaigrette

Ingredients:

- ¼ cup red wine vinegar

- 1/4 cup olive oil

- ¼ cup crumbled feta cheese

- 2 tbls ripe olives, chopped


Lemon Herb Vinaigrette

Ingredients:

- 3 tbls lemon juice

- 1/2 cup olive oil

- 1 tbls fresh herbs (parsley, basil, dill, tarragon, etc)


Balsamic Vinaigrette

Ingredients:

- 3 tbls balsamic vinegar

- 1/2 cup olive oil

- 1 tbls honey or brown sugar


Honey Mustard Vinaigrette

Ingredients:

- 1/2 tbls honey

- 1 tbls Dijon mustard

- 2 tbls white wine vinegar

- ¼ cup canola or grapeseed oil


Teriyaki Vinaigrette

Ingredients:

- ¼ cup cider vinegar

- 3 tbls water

- ½ cup olive oil

- 1 tbls sesame oil

- 1 tbls soy sauce

- 1 tbls brown sugar
